Lemon cheesecake

Am home right now and this is the best time to make sure that I gorge on all of mom’s goodies. In her arsenal of deadly recipes is lemon cheesecake. I am being generous here by sharing the recipe because I find it heavenly and am sure that you will too. It’s a simple baked dish.

You will need: 32 Marie biscuits powdered, 150 gms of butter, 1 tin of condensed milk, 3 tbsp of maida, 3 eggs separated and the whites beaten stiff, between ¼ to ½ cup of lime juice depending on the size of limes as well as your taste for lemon.

Melt the 150 gms of butter and mix in the powdered Marie biscuits. Line the base of your baking dish with this mixture and press it down well. Mix together the condensed milk, maida and lime juice well. Once this is done fold in gently the stiffly beaten egg whites. With this done pour the mixture on top of the biscuit base.

Preheat your oven to 180 degrees and pop in the baking dish. Bake for around half hour. Take it out when done and enjoy maadi!!!
