Easy cooking

Creme Catalana - a simple dessert

Wednesday, August 12, 2009Me! In words

I am constantly on the look out for desserts that are easy to make. The lesser time I spend doing them the better. So when I came across a dessert that needed no baking or steaming or any other time-consuming cooking, I was ecstatic. For those of who like to indulge in a little sweet something at the end of a meal, try this... you will not be disappointed.

Ingredients - four yolks (you can make an omelette of the whites :), 1/2 cups sugar, 2-3thbps of cornstarch, 3-4 sticks of cinnamon and 2 cups of milk.
For the cornstarch. Take 2-3 level tbsps of cornstarch and mix it with COLD milk gradually to get a smooth paste.

The ingredients

Separate the yolks from the white

Once you have separated your eggs, beat the yolks well with the sugar till it becomes a frothy smooth mixture.

Mix the yolks and the sugar

Whisk together till well blended

In a saucepan, boil the milk with the cinnamon sticks. A bit of advice, use lesser number of sticks if you are not a major fan of cinnamon flavour.

Boil the milk with cinnamon sticks

Once the milk has boiled, strain it over the egg and sugar mixture mixing well. Put this back on the fire and lower the heat to a sim. Gradually add the cornstarch and stir well till it boils. Take it off the fire when the mixture begins to thicken.

Strain the boiled milk over the egg mixture and return to fire

I put the pudding in glass teacups that I had to set. You can put it in one big bowl or individual ramekins. Pop these into the fridge to set. And Voila!!! do let me know how it goes if you make this.

Pour into cups or ramekins and pop into the fridge to set
