Here is another yummy recipe that mom dished out when here.

Ingredients: 3/4 kg brinjals, 10 curry leaves, 10 garlic flakes, 3 tsps coriander seeds, 1 1/2 tbsps sugar, 4 1/2 tbsps vinegar, 1 green chilli finely chopped, 1 1/2 tsps jeera seeds, 8 dry red chillies, oil to fry, salt to taste.


Method: Grind garlic, jeera, coriander seeds in 3 tbsps vinegar. Deep fried diced brinjals and keep aside. Take some of the same oil, fry the curry leaves, green chillies and the ground masala for about 2 minutes. Add the fried brinjals, mix well. Add sugar, salt and the remaining vinegar and cook till done. Sprinkle some water if needed in between.
