Simple and nice lamb gravy

As usual, I am on the constant look out of recipes that are simple to make and don't require too much of slogging in the kitchen. Having said that, it doesn't mean that I don't enjoy laborious cooking as well. That is saved for long weekends and the quick cooking ensures that I have good food on the table at every meal, that we can all look forward to at the end of the tiresome day. After all, with a baby, a robust freelance writing career and a home to manage, shortcut cooking is the answer to my prayers. So here is a simple mutton curry which turned out rather well.

Ingredients: 1 kg mutton, 10 dry red chillies, 1 tsp of jeera, 2 tsp of coriander seeds, 1 onion, 6 garlic flakes, a bit of turmeric, 8 peppercorns, 1 tsp mustard and half a coconut. Dry roast the onion and the coconut separately and then roast all of the other ingredients. Put them in a mixie and blend to a smooth paste.

Method: Heat oil in your pressure cooker and fry a medium sliced onion till golden brown. Add the ground masala and fry for a while. Toss in the mutton and mix it up well. Add water according to the consistency you want, a gravy or a dry dish and pressure as normal. This goes well as a gravy with ghee rice or even plain steamed rice.
