Sweet and sour baingan

Now that mom is in town for the week, I have made full use of her and got her to cook a whole load of dishes. This is one baingan dish I am sure that all my veggie and non-veggie followers alike would love. And true to the theme of the recipes I feature here it is simple to make. Here is how it goes.

Ingredients: 3-4 brinjals (you can of course use more and change proportions accordingly), 1 onion, 2 green chillies, 1/2 inch ginger, 4 flakes of garlic (or ginger garlic paste will do too), 1 sprig of curry leaves, saunf, 1/2 tsp, 1 tsp chilli powder, 1/2 tsp haldi, thick tamarind juice, salt to taste and a bit of sugar.

Method: Heat oil and fry brinjals cut into lengthwise strips. Remove and drain on paper.

Fried brinjals

In the same oil fry sliced onions, chillies, ginger, garlic and curry leaves. Add the saunf and fry till light brown. Add the chilli powder and haldi powder. Fry for some more time. Add the tamarind juice, salt and sugar.

Cooked masala just before you tip in the brinjals

When it starts to boil, add the brinjals. Simmer on low fire till done.
