Uttranchali Meat Curry

Like I promised in my previous recipe, I did try the Uttranchali meat curry recipe that I came across. And the verdict is that it is really worth sharing. So here goes.

Ingredients: Around 700 gms of mutton, 2 onions and 2 tomatoes chopped
Grind the following into a smooth chutney - 2 tbsps of garlic flakes, 1/2 tsp of turmeric powder, 1 tsp of coriander seeds, 1 tsp of cumin seeds and approximately 1 tsp of red chilli powder (you can add more as per your taste) and salt. Use a little water at a time and make a nice smooth paste. Don't go by the quantity, it will look really small, but it is quite potent.

Method: Once you are done with grinding the chutney, heat oil in a vessel and fry the chopped onions till they are golden brown. And yes this will take some patience. Once done, add in the chutney and fry it up well. And the chopped tomatoes and cook it till its done. Only after this do you add the mutton and around 2 and 1/2 cups of water (again this is adjustable to the consistency you like).

The real way to proceed from here on is to seal the vessel with dough and let it cook on slow fire for around an hour or so. The simpler way and the one I always opt for is to put the vessel in a pressure cooker and let it cook the normal way. In case you do opt for the slow method, you will know that the meat is done when the dough becomes dry and starts to crack.
