Khushi's Calzones

My childhood friend Khushnuma called me up from Hyderabad last week and said that a neighbor of hers had created a Calzone of her own. Khush was keen I try the recipe and if it turned out well, feature it on the blog. Well I did try it out and did turn out rather well. So here goes:

Ingredients: 2 cups of diced boneless chicken (paneer for the veggies), 1 cup of diced tomatoes (make them chunky and not finely chopped), 2 medium onions sliced, 4-5 cloves of garlic cut into chunks (again not finely diced), seasonings from takeaway pizza (oregano and chilli flakes), Sweet and sour ketchup ( I used HP BBQ sauce instead). Chapathi dough as you normally make it.

Method: For the Chicken/paneer. Heat a bit of olive oil (regular oil will also do) in a pan. Throw in the garlic and after a while the chicken. When its color begins to change add in the sliced onions. Fry for a while till the onions are translucent. Add the chopped tomatoes and the seasoning along with salt. Fry well till the chicken is cooked. Add a dash of the sauce you have and toss the chicken a bit. Keep this mixture aside. Make sure that the mixture is as dry as you can possibly get it.

Chicken stuffing

For the calzones: Roll out a chapathi a little thicker than you normally do and place a bit of the mixture on one half of the circle. Don't put on too much of the stuffing or you risk it bursting when you fry it later. Fold over with the other half of the circle and roll the edges together. Don't just pinch them shut, roll them together.

Heat oil in a shallow pan and fry these on both sides. This amount of mixture makes around 7 medium sized calzones. Don't make the mistake of stuffing them and keeping them aside to fry later. The oil in the chicken mixture will turn the dough soggy and it will burst. This dish makes a nice change to routine dinners.
